Redcurrant Liqueur


Ingredients:
4 litres of ripe fresh redcurrants
2,5 litres of vodka  40%
1 kg of white sugar
Preparation:
  • Clean the redcurrants by removing stalks, leaves and any bad fruit. Wash on a strainer under cold running water.
  • Prepare and clean 5 litres glass jar. Plastic is not recommended.
  • Put layers of fruit and sugar in the jar, slightly pressing on the fruit. Store the jar with fruit in a dark place for about 3 days until the sugar dissolves. During that time shake the jar vigorously at least a couple times a day to speed up the sugar dissolving process.  
  • After  3 days pour the vodka I to the jar.
  • Leave to macerate in a dark and cold place for at least 6 to 8 weeks. Shake the jar a couple times a week during this time.
  • Strain the main liquid from the fruit and put aside.
  • Now strain the juices from the fruit, giving it a good squeeze though muslin cloth.
  • Both liquids now need to be strained multiple times via cotton wool to make sure all the sediment is removed.
  • When both liquids have been clarified, combine them and pour into prepared liqueur bottles.
  • The liqueur has to mature for at least 6 months.
This amount of fruit sugar and vodka should provide about 3,5 litres of finished product.
